Fried Enchiladas - Bev Emigh
Instructions:
This recipe was aired by Michelle Eichler on Muzzy Bad to the Bone TV show.
1 lb ground venison
Brown meat, sprinkle with taco seasoning to taste
Add 1 cup water, let cook down a few minutes
Grate 1lb cheddar cheese(more if you like it super cheesy)
Medium chop one large onion
Refried beans
Leftover potatoes (any kind boiled,mashed,roasted,fried)
Green chilies
8 large tortillas
Warm tortilla in a pan for more flexibility.
Spread a layer of beans...meat...potatoes...chilies...onions...cheese in a 2-3 inch row in about the middle of the tortilla.
Roll it up folding in the ends as you go (may take a couple to get the hang of it).
At this point can be individually wrapped in plastic wrap and frozen(thaw before cooking) or refrigerated overnight to cook for next day's meal.
Heat an inch of canola oil in a pan, place a tortilla in pan folded side down, fry until lightly brown,flip carefully and brown other side.
Cover with foil, place in warmed oven til ready to serve.
A little sprinkle of cheese on top when in oven adds a little more gooey yumminess.
Serve with salsa and sour cream.
